SCD Granola
Feel free to mix up varieties of nuts
Ingredients:
- 1 c raw almonds
- 1 c raw cashews
- 1/2 c shredded unsweetened coconut
- 1/3 c melted coconut oil
- 1/4 c maple syrup or honey
- 1 tbsp cinnamon
- 1 tbsp vanilla
- 5-6 pitted dates (cut into pieces-scissors make this easy)
Instructions:
- Crush nuts in a food processor or blender until coarse.
- Mix in other ingredients.
- Spread on a baking sheet that has been greased or lined with parchment paper.
- Bake at 350F until brown and crispy, stir every 5 min or so to ensure everything gets toasted
- Mix in dates towards the end (once things start to brown).
- Let cool
- Transfer into an air tight container and kept in the fridge.
