Black Bean Chocolate Brownie Cake
Ingredients:
- 2 cups organic black beans
- 3 organic eggs
- 1/3 cup cocoa powder
- 1/3 cup coconut oil
- 1/2 unpasteurized honey
- 1/2 tsp baking soda
- 1/2 tsp salt
Directions:
- Preheat oven to 350 F
- Rinse the beans thoroughly and soak in water to eliminate as much raffinose (gas-producing sugar) as possible
- Place all the ingredients in a blender or food processor, and blend until well combined
- (Optional) Line the baking dish with parchment paper
- Spoon the mixture into the baking dish
- Bake for 30-35 minutes or until toothpick comes out clean.
