Black Bean Chocolate Brownie Cake

Ingredients:

  • 2 cups organic black beans
  • 3 organic eggs
  • 1/3 cup cocoa powder
  • 1/3 cup coconut oil
  • 1/2 unpasteurized honey
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Directions:

  • Preheat oven to 350 F
  • Rinse the beans thoroughly and soak in water to eliminate as much raffinose (gas-producing sugar) as possible
  • Place all the ingredients in a blender or food processor, and blend until well combined
  • (Optional) Line the baking dish with parchment paper
  • Spoon the mixture into the baking dish
  • Bake for 30-35 minutes or until toothpick comes out clean.
